Amaze your guests with these elegant mini lemon tarts. They look impressive, taste delicious and are quick and easy to make. With the help of GLAD’s wide range of products, you can create showstoppe­r desserts without too much fuss.

MINI LEMON TARTS

The best part of these tarts is the lemon cream you make from scratch. Use freshly squeezed lemon juice – you’ll taste the difference!

Makes: 8 mini tarts

Preparatio­n time: 10 min

Cooking time: 10 min

Setting time: 1 hour

200 g coconut biscuits

80 g (85 ml) butter, melted

1 cup (250 ml) freshly squeezed lemon juice

4 eggs, plus two egg yolks

1 cup (250 ml) sugar Pinch of salt

350 g cold butter, cubed

1. Add the biscuits to a GLAD Zip Seal bag. Press out all the air and seal the bag. Crumb the biscuits with a rolling pin (PHOTO 1). Mix the crumbs and the melted butter and divide between 8 glasses. Use a spoon to press the mixture to the bottom of the glass.

2. Create a double boiler with a small saucepan and a glass bowl that fits on the rim of the saucepan. Fill about a quarter of the saucepan with water (the water shouldn’t touch the bottom of the glass bowl) and place over medium heat.

3. Add the lemon juice, eggs, yolks, sugar and salt to the glass bowl and whisk using a wire whisk. Keep whisking until the mixture is cooked and thick, about 8 to 10 minutes. As soon as the lemon cream is done, remove from the heat and pour into a mixing bowl (don’t keep it in the warm glass bowl).

4. One by one, add the cold butter cubes to the lemon cream and pulse with a stick blender until all the butter has been added.

5. Divide the lemon cream between the glasses and place on a baking tray. Cover with GLAD Cling Wrap

(PHOTO 2). Let it set in the fridge for 1 hour. Serve.
