For his new lifestyle show World Of Flavour, Big Moe is travelling across the US to meet up with barbecue masters who know a thing or two about seasoning meat and cooking up a storm on an open flame. And while South Africans are the best at braaiing, that doesn’t mean we can’t learn a thing or two about cooking…

Season it! “Do not be afraid to add a ton of seasoning,” says Moe. “The open flame is going to caramelise a lot of the spices when it mixes with the meat and fat. That’s going to change the flavour profile, so you need to get a lot of spices on your meat. The more, the better.”

Pile on! Moe says that the bigger your piece of meat, the better “because meat shrinks on the flame. It still weighs the same as it did when you started, but it’s smaller in physical size. So double up!”

Know your flame! Fire is fire, right? Wrong! “There are different fires. Even your wood changes the flame,” explains Moe. “Coal fires are hotter than wood fires. It’s easier to burn meat that way. So know the kind of fire you have.”

The customer is king! “You need to know who you’re cooking for, so do all your meat medium-rare and then ask people how they want theirs. Chances are medium-rare.”

The right price! “Pay more for good meat and you’re going to eat, eat, eat!” says Moe. “You can taste the difference in quality.”
