2 gar­lic cloves, crushed to serve

2tbsp pome­gran­ate con­cen­trate 5 spring onions, finely sliced

Œ Heat the oven to 200°C, 180°C fan. Trim any flabby ends or sides off the salmon and check there are no pin bones. Put it on a bak­ing tray lined with oiled foil. Place the rest of the in­gre­di­ents in a bowl with ½tsp sea salt and mix to form a paste. Rub over the salmon and bake for 15 min­utes.

Re­move from the oven then, when you’re ready to serve, scat­ter over lemon zest, driz­zle over the pome­gran­ate con­cen­trate, and sprin­kle over the spring onions. Per serv­ing: 2 293 kilo­joules, 42g fat (7g sat­u­rated), 3g car­bo­hy­drate
