Salmon blends perfectly with these spices, which cut through its richness. Serve this hot or cold.

5g ras el hanout blend
2 garlic cloves, crushed to serve
2tbsp pomegranate concentrate 5 spring onions, finely sliced
Heat the oven to 200°C, 180°C fan. Trim any flabby ends or sides off the salmon and check there are no pin bones. Put it on a baking tray lined with oiled foil. Place the rest of the ingredients in a bowl with ½tsp sea salt and mix to form a paste. Rub over the salmon and bake for 15 minutes.
Remove from the oven then, when you’re ready to serve, scatter over lemon zest, drizzle over the pomegranate concentrate, and sprinkle over the spring onions. Per serving: 2 293 kilojoules, 42g fat (7g saturated), 3g carbohydrate
