This is a fun and easy way to serve a salad or starter. You can put what­ever you like on top, but the wa­ter­melon and feta are the ba­sic com­bi­na­tion, and we love the sweet­ness of the fruit and the salti­ness of the cheese. We took wa­ter­melon slices and added crum­bled feta – you could even use goats’ cheese – black olives, av­o­cado, rocket, basil, plenty of black pep­per and a good driz­zle of olive oil. It’s ready in min­utes, and looks so fresh and sum­mery! >>
