ROCKET AND RED PEPPER PESTO
Makes 1 cup EASY GREAT VALUE Preparation: 15 minutes large red peppers 2, quartered and seeded garlic 2 cloves, chopped rocket 20 g olive oil ¼ cup Parmesan 75 g, grated salt ½t chilli flakes ¼t
1 Grill the peppers – skin side up – until charred. Place in a bowl and cover with clingwrap until cooled, then peel and chop. 2 Blend the garlic with the peppers and rocket. Add the oil and blend to form a paste. Stir in the Parmesan, seasoning and chilli flakes.
