The Cederberg Bukettraub­e (see page 52), with its balanced acidity and touch of sweetness, is the obvious match for the recipe’s spicy elements, such as the chakalaka and Dijon mustard (page 76). But I really like the fresh Terra del Capo Pinot Grigio (R79.99), which has green melon and stone fruit aromas and flavours. Its light palate and medium acidity make it a brilliant partner. Plus, it will cleanse your palate, leaving a mouth-watering aftertaste between each mouthful of food.
