The Cederberg Bukettraube (see page 52), with its balanced acidity and touch of sweetness, is the obvious match for the recipe’s spicy elements, such as the chakalaka and Dijon mustard (page 76). But I really like the fresh Terra del Capo Pinot Grigio (R79.99), which has green melon and stone fruit aromas and flavours. Its light palate and medium acidity make it a brilliant partner.
