4 T-bone steaks,

3 cm thick MARI­NADE 80 ml lemon juice 60 ml (¼ c) olive oil 30 ml (2 T) soy

sauce 2 gar­lic cloves,

crushed 10 ml (2 t) aniseeds,

crushed salt ONION RINGS

2 large onions, cut

into rings salt oil for deep-fry­ing 500 ml (2 c)


1 Mari­nade Mix to­gether all the ingredient­s, ex­cept the salt, in a glass bowl and mar­i­nate the steaks for 1 hour. 2 Sea­son the steaks with salt and braai on an open grid or in a fold­ing grid over hot coals till sealed on both sides. Con­tinue braaing higher above the coals un­til done to your lik­ing (see cook­ing tips on page 20). 3 Onion rings Sprin­kle the onions with salt and leave to stand for 5-10 min­utes. This draws mois­ture from the onions. 4 Heat enough oil for deep-fry­ing. Shak­ing off ex­cess wa­ter, coat the onions with the maizena and plunge into hot oil a few at a time. Fry un­til crisp and serve with the steaks.
