PAPRIKA PORK CHOPS
SERVES 8 Preparation time: 20 min Standing time: 15 min Cooking time: 15 min (chops), 10 min (sauce)
BASTING SAUCE 125 ml (½ c)
white wine 60 ml (¼ c)
soy sauce 5 ml (1 t) mustard
powder 375 ml (1½ c)
pineapple juice 2 garlic cloves,
crushed 30 ml (2 T)
brown sugar CHOPS 8 pork chops, cut
2-3 cm thick 5 ml (1 t) chopped
fresh sage 5 ml (1 t) paprika salt and pepper SPRING ONION RICE 500 ml (2 c) jasmine rice cooked according to the packet instructions 4-6 spring onions,
finely chopped handful sesame
seeds 1 Basting sauce Heat together all the ingredients for 10 minutes until slightly reduced Allow to cool 2 Chops Rub the chops with the sage and paprika and set aside for about 15 minutes 3 Season the meat with salt and pepper, and braai over moderate-to-hot coals for about 15 minutes, turning frequently and basting with the sauce until the meat is just done 4 Spring onion rice Add the chopped spring onions to the rice and sprinkle sesame seeds over Mix together 4 Heat the remaining sauce until it reaches boiling point and serve with the chops and spring onion rice
Apple sauce is also delicious with pork regardless of the cut Chop 4 apples finely, add 60 ml (¼ c) sugar and 125 ml (½ c) water and cook until soft Blitz the apple mixture, 60 ml (¼ c) butter and 30 ml (2 T) Sichuan or black pepper in a food processor until smooth Serve with the pork
