250 g mush­rooms oil for fry­ing 250 g ba­con strips 1 chorizo, sliced pa­prika 2 toma­toes, sliced salt and freshly ground black pep­per 4 slices of bread 4 eggs fresh rocket to

gar­nish

1 Thread the mush­rooms on skew­ers and set aside (if us­ing wooden skew­ers, first soak in wa­ter so they don’t catch alight on the fire) 2 Pour a lit­tle oil in a large saucepan over mod­er­ate coals and fry the ba­con strips un­til crisp Re­move, set aside and keep warm 3 Quickly brown the mush­room ke­babs in the pan and set aside 4 Fry the chorizo slices un­til just done and sea­son with pa­prika Set aside 5 Toast the bread over the coals in a grid or the pan and set aside 6 Brown the toma­toes slightly and sea­son with salt and pep­per Set aside and keep warm 7 Fry the eggs to your lik­ing and spoon the chorizo slices over them 8 Ar­range the ba­con, tomato, mush­room skew­ers and toast in the saucepan with the fried eggs and chorizo Scat­ter rocket over and sea­son with salt and pep­per
