Spicy braaied pork ribs
SPICY BRAAIED PORK RIBS
4 racks of pork ribs water to cover
125 ml (¼ c) vinegar
4 bay leaves 6 peppercorns
45 ml (3 T) salt
BASTING SAUCE
250 ml (1 c) ready-made
steakhouse sauce
250 ml (1 c) ready-made
spare-rib sauce
10 ml (2 t) smoked paprika 60 ml (¼ c) brown sugar

1-2 hours (meat) 15 min (sauce) Braaiing 15-20 min
15 ml (1 T) instant coffee granules HORSERADISH SAUCE
180 ml (¾ c) sour cream
30 ml (2 T) ready-made horseradish
sauce
10 ml (2 t) Dijon mustard
10 ml (2 t) Worcestershire sauce handful of fresh parsley, chopped chips to serve
1 Put the ribs in a large pot. Cover with water. Add the vinegar, bay leaves, peppercorns and salt. Simmer over medium heat for
1-2 hours or until the meat pulls away from the bone easily.
2 Basting sauce Put the ingredients in a saucepan and bring to the boil. Reduce the heat. Simmer for 10 minutes, stirring often.
3 Braai the ribs over hot coals.
Baste often with the sauce, for 15-20 minutes or until browned.
