Spicy braaied pork ribs

4 racks of pork ribs wa­ter to cover

125 ml (¼ c) vine­gar

4 bay leaves 6 pep­per­corns

45 ml (3 T) salt


250 ml (1 c) ready-made

steak­house sauce

250 ml (1 c) ready-made

spare-rib sauce

10 ml (2 t) smoked pa­prika 60 ml (¼ c) brown sugar

SERVES 8-10 Prepa­ra­tion 30 min Cook­ing

1-2 hours (meat) 15 min (sauce) Braaiing 15-20 min

15 ml (1 T) in­stant cof­fee gran­ules HORSERADIS­H SAUCE

180 ml (¾ c) sour cream

30 ml (2 T) ready-made horseradis­h


10 ml (2 t) Di­jon mus­tard

10 ml (2 t) Worces­ter­shire sauce hand­ful of fresh pars­ley, chopped chips to serve

1 Put the ribs in a large pot. Cover with wa­ter. Add the vine­gar, bay leaves, pep­per­corns and salt. Sim­mer over medium heat for

1-2 hours or un­til the meat pulls away from the bone eas­ily.

2 Bast­ing sauce Put the in­gre­di­ents in a saucepan and bring to the boil. Re­duce the heat. Sim­mer for 10 min­utes, stir­ring of­ten.

3 Braai the ribs over hot coals.

Baste of­ten with the sauce, for 15-20 min­utes or un­til browned.
