Pork belly on the spit

SWEET SOY MARINADE

60 ml (¼ c) soy sauce

45 ml (3 T) honey

30 ml (2 T) rice wine vinegar 2 garlic cloves, crushed 1 chilli, chopped

5 cm fresh ginger, grated 250 ml (1 c) water

Mix all the ingredients well.

GARLIC AND HERB MARINADE

4 garlic cloves, crushed juice and grated zest of 1 lemon 15 ml (1 T) fresh thyme leaves 10 g fresh parsley, chopped

375 ml (1½ c) chicken stock

Mix all the ingredients well.
