Roly-poly pudding
1 kg ready-made bread dough (ask
at your supermarket bakery) 250 ml (1 c) sugar
15 ml (1 T) ground cinnamon
100 g butter, cubed
1 tub (250 g) cream cheese
250 ml (1 c) icing sugar
30 ml (2 T) lemon juice
Grease a flat-bottom cast-iron pot with butter.
1 Roll out the dough on a lightly floured surface into a rectangular shape, 1-1½ cm thick.
2 Mix the sugar and cinnamon and sprinkle evenly over the dough. Scatter the butter cubes evenly over the cinnamon sugar. 3 Starting from the longer side, roll up the dough. Cut into 2 cm thick slices and arrange them, flat side down, tightly together in the prepared pot. Leave to prove in the pot for about 20 minutes.
4 Cover the pot with the lid and place over low coals with a few coals on the lid. Bake for 40-45 minutes.
5 Whisk the cream cheese, icing sugar and lemon juice together and spoon over the hot pudding as it comes off the coals.
