Spicy pan fish
The cocoa gives the fish an interesting robust flavour.
SPICE MIX
45 ml (3 T) brown sugar
5 ml (1 t) cocoa powder
5 ml (1 t) each turmeric, garlic flakes and
cayenne pepper
2 ml (½ t) each ground cinnamon, nutmeg and
onion flakes salt and pepper
FISH
4 fillets or portions of fish such as jacopever or hake oil knob of butter juice of 1 lime
1 Spice mix Combine all the ingredients.
2 Fish Roll the fish in the spice mix to coat.
3 Heat a little oil in a pan and fry the fish over moderately hot coals for about 3 minutes or until golden brown. Turn and fry the other side. Add a little water, cover and steam until the fish is just done and no longer translucent, 5 minutes.
4 Remove the fish from the pan, add the butter and lime juice to the pan and reduce to a fragrant sauce. Serve with the fish.
