MAKES ABOUT 260 ml

125 g dried chill­ies, chopped boil­ing wa­ter

20 ml (4 t) dried mint

20 ml (4 t) each ground cumin and ground co­rian­der

5 ml (1 t) car­away seeds

10 ml (2 t) finely chopped gar­lic cloves

5 ml (1 t) salt
