BAK­ING BREAD ON THE COALS

Make sure both the pot and its lid are well greased with but­ter. Put the pot on a stand over mod­er­ate coals and pack a few coals on the lid. Check of­ten that the bread doesn’t burn, which hap­pens eas­ily if the coals are too hot or the pot is too close to the fire. Make sure the heat is evenly dis­trib­uted and turn the pot from time to time. Bake un­til the bread is done – it will sound hol­low when you knock on the base.
