BAKING BREAD ON THE COALS

Make sure both the pot and its lid are well greased with butter. Put the pot on a stand over moderate coals and pack a few coals on the lid. Check often that the bread doesn’t burn, which happens easily if the coals are too hot or the pot is too close to the fire. Make sure the heat is evenly distributed and turn the pot from time to time. Bake until the bread is done – it will sound hollow when you knock on the base.
