Honey rotisserie chicken
Roasted chicken was her late mom’s favourite family food, Reshika Singh says. “She taught me how to make it.”
SERVES 4
1 whole chicken
6 garlic cloves, crushed
5 ml (1 t) grated fresh ginger 15 ml (1 T) freshly ground
black pepper
5 ml (1 t) ground cloves
15 ml (1 T) ground coriander 5 ml (1 t) ground cumin 60 ml (¼ c) honey chopped fresh coriander
to garnish
1 Truss the chicken wings with butcher’s twine then truss the drumsticks together.
2 Combine the rest of the ingredients well (except the fresh coriander) and rub over the entire chicken.
3 Put the chicken in a rotisserie grid and braai for about 45 minutes over moderate coals until done. Carve into portions and sprinkle the coriander over.
