Baby potatoes with bacon and dill
2 SERVES6 Preparation 10 min Cooking 40 min
30 ml (2 T) olive oil
125 g smoked streaky bacon, chopped 7 ml (1½ t) smoked paprika
5 ml (1 t) ground cumin
5 ml (1 t) ground coriander
500 g baby potatoes, boiled and
drained salt and freshly ground pepper
2 dill sprigs, chopped 1 Heat the oil and fry the bacon until crisp. Add the spices and stir-fry for another minute.
2 Halve the potatoes and mix into the bacon mixture. Season with salt and pepper.
3 Remove the bacon and potato mixture from the heat and mix in the dill. 4 Put two sheets of foil on top of each other and spoon the potatoes into the middle. Fold the foil over to make a parcel.
5 Braai the potato parcel on a grid for 30 minutes or until the potatoes are deliciously crisp.
