Fry­ing pan brown­ies

250 ml (1 c) sugar

3 eggs

250 ml (1 c) cake flour

125 ml (½ c) co­coa pow­der pinch of salt


60 ml (¼ c) cream

150 g dark choco­late, bro­ken into pieces ice cream to serve

Pre­heat the oven to 180 °C.

1 Beat the sugar and eggs to­gether in a large bowl.

2 In a separate bowl, sift the flour, co­coa pow­der and salt to­gether.

3 Melt the but­ter with the cream in a ca­st­iron pan, add the dark choco­late pieces and stir un­til melted. Cool for 5 min­utes.

4 Add the melted choco­late to the egg mix­ture and mix. Fold in the flour mix­ture.

5 Clean the cast-iron pan, grease with but­ter and pour in the bat­ter.

6 Bake for 15-20 min­utes or un­til set but still slightly runny in the mid­dle. Serve with ice cream.
