Masala wheat salad

500 ml (2 c) wheat or

barley

1 green pepper, diced 1 red pepper, diced 4 spring onions,

chopped

2 celery sticks, chopped 50 g walnuts, chopped handful of fresh

coriander DRESSING

250 ml (1 c) plain

yoghurt

45 ml (3 T) castor sugar 10 ml (2 t) lemon juice 15 ml (1 T) roasted

masala

10 ml (2 t) ground cumin salt and freshly ground

black pepper

1 Cook the wheat or barley according to the packet instructio­ns. Rinse and drain.

2 Add the peppers, spring onions, celery and walnuts to the wheat or barley. Mix and set aside.

3 Dressing Whisk together the yoghurt, sugar, lemon juice, masala and cumin and season with salt and pepper.

4 Mix the dressing with the salad, sprinkle coriander on top and serve.
