Braaied tor­tillas

These toasties are great for snack­ing on be­fore a meal or serv­ing for break­fast at the fire­side. ONION AND BEER MAR­MALADE

15 ml (1 T) olive oil 2 onions, sliced into rings 30 ml (2 T) brown sugar 125 ml (½ c) beer

30 ml (2 T) bal­samic

vine­gar TOR­TILLAS AND FILL­INGS 2-3 ba­con rash­ers, cooked

and finely chopped 8 tor­tilla wraps

250 ml (1 c) grated ma­ture

Ched­dar cheese hand­ful of rocket or

spinach leaves

1 Onion and beer mar­malade Cook all the in­gre­di­ents in a saucepan un­til thick, about 20 min­utes.

2 Tor­tillas and fill­ings Mix the ba­con and 60-80 ml (¼-¹⁄₃ c) of the onion and beer mar­malade. Spread over half the tor­tillas.

3 Sprin­kle the cheese and rocket or spinach on top.

4 Cover with the other tor­tillas, ar­range in a fold­ing grid and braai over hot coals un­til the cheese has melted, about 10-15 min­utes.
