Couscous salad

125 ml (½ c) couscous 3 spring onions,

chopped handful of fresh mint,

finely chopped handful of fresh parsley, finely chopped 100 g cherry tomatoes,

sliced DRESSING

1 garlic clove, crushed 45 ml (3 T) olive oil zest of 1 lemon and

30 ml (2 T) of juice salt and freshly ground

black pepper

1 Prepare the couscous according to the packet instructio­ns. Fluff with a fork.

2 Add the spring onions, mint, parsley and tomatoes and mix.

3 Dressing Combine all the ingredient­s and mix well with the couscous. Season with more salt and pepper, if necessary.
