“I’m al­ways test­ing new ideas and tried mak­ing piz­zas in a ket­tle braai. One gets a sim­i­lar wood­fired taste as when us­ing a wood-fired oven,” says Es­ther Malan.

3 large ready­made pizza bases (ba­sic bread dough)

1 Cover each base with top­pings of your choice – seafood, meat or vege­tar­ian (see right).

2 Ar­range each base and top­ping on a ket­tle braai or on a grid over mod­er­ate coals. Close the lid or cover with alu­minium foil and braai for about 10-12 min­utes un­til the bases are crisp and the cheese melted. Serve im­me­di­ately.
