Apple puffs
APPLE PUFFS
500 g apples, peeled and
chopped
125 ml (½ c) breadcrumbs
125 ml (½ c) crumbled
Nuttikrust biscuits
75 g sugar
5 ml (1 t) ground cinnamon
125 ml (½ c) raisins (optional) zest of 1 lemon
30 ml (2 T) butter
2 rolls (400 g each) puff pastry 1 egg, whisked mascarpone cheese to serve Preheat the oven to 180 °C and grease a baking sheet with nonstick spray or butter.
1 Mix the apples, breadcrumbs, biscuit crumbs, sugar, cinnamon, raisins (if using), lemon zest and butter and combine well to form the filling.
2 Cut the pastry into long rectangular strips about 6 x 20 cm. Put a spoonful of the filling at one end of a strip and fold the pastry over to form a triangular pocket, then continue folding until the end of the strip like a samoosa. Secure ends using water. Repeat with the rest of the pastry and filling.
3 Transfer to the prepared baking sheet, brush with the whisked egg and bake for 15 minutes or until golden brown.
4 Braai over hot coals for a further 5-10 minutes, turning once.
5 Serve hot with mascarpone cheese.
