500 g spaghetti 250 g ba­con, cut into pieces 2 gar­lic cloves, crushed 250 ml ( 1 c) cream

1 Cook the spaghetti in boil­ing salted wa­ter un­til just done but still firm Drain, re­serv­ing 60 ml ( ¼ c) of the 125 ml ( ½ c) Greek yo­ghurt 250 ml ( 1 c) peas salt and freshly ground pep­per cook­ing liq­uid 2 Heat a fry­ing pan and fry the ba­con pieces Add the gar­lic and fry for 1 minute 3 Re­duce the heat, add the cream and yo­ghurt and sim­mer slowly un­til the mix­ture thick­ens slightly 4 Add the peas and sea­son with salt and pep­per 5 Add the ba­con sauce and re­served cook­ing liq­uid to the spaghetti and toss 6 Serve with ex­tra rash­ers of crisply fried ba­con, if pre­ferred
