Cape Malay boe­ber

Boe­ber is a favourite tra­di­tion­ally South African pud­ding which can also be en­joyed as a com­fort­ing sweet break­fast.

Prepa­ra­tion time: 5 min­utes Cook­ing time: 20 min­utes

125 g but­ter 200-250 g ver­mi­celli 2 car­damom pods 1 cin­na­mon stick 125 ml (½ c) sul­tanas 1 can (385 g) con­densed milk 1, 5 litres (6 c) chai rooi­bos tea 30 ml (2 T) rose­wa­ter 20 ml (4 t) corn­flour 50 g pis­ta­chio nuts, chopped

1 Melt the but­ter in a large pan, add the ver­mi­celli, car­damom pods and cin­na­mon stick and heat un­til brown. 2 Add the sul­tanas, con­densed milk and tea. Bring to the boil and sim­mer for 5 min­utes. 3 Mix the rose­wa­ter with the corn­flour and add to the pan, stir­ring un­til it comes to the boil and thick­ens. 4 Scat­ter the chopped pis­ta­chio nuts on top and serve.
