MAIZE MEAL PIZZA
This is a fun dish to make for the whole family and a great way to use leftover mieliepap.
4-6 portions Preparation time: 20 minutes Cooking time: 20 minutes
250 ml (1 c) maize meal 1 can (410 g) chopped tomatoes 250 g bacon 20 ml (4 t) oil 30 ml (2 T) butter 2 onions, thinly sliced 30 ml (2 T) brown sugar 30 ml (2 T) balsamic vinegar 3 thyme sprigs 125 g mushrooms, chopped 125 g mozzarella cheese, grated cherry tomatoes, halved, and rocket to garnish
1 Preheat the oven to 200 °C and line a baking sheet with baking paper. 2 Make stiff pap according to the maize meal packet instructions and transfer to the lined baking sheet. Spread about 5-10 mm thick. 3 Spread the tomatoes over the base. 4 Fry the bacon until crispy and set aside. 5 Heat the oil and butter in a pan, add the onions, sugar and vinegar and fry until the onions are caramelised. Add the thyme, remove from the heat and allow to cool. 6 Spread the cooled onions over the tomato, followed by the bacon, mushrooms and finally the cheese. 7 Bake for 10 minutes. Garnish with fresh cherry tomatoes and rocket.
