You can use any type of dried fruit in these crunchy cook­ies.

About 20 cook­ies Prepa­ra­tion time: 15 min­utes Bak­ing time: 10 min­utes

corn­flour for sprin­kling 250 ml (1 c) ground al­monds 250 ml (1 c) mixed nuts, roughly chopped 250 ml (1 c) dried fruit such as cran­ber­ries and Turk­ish apri­cots, chopped 500 ml (2 c) des­ic­cated co­conut pinch of salt 150 ml honey 7 egg whites melted dark cho­co­late to driz­zle

Pre­heat the oven to 180 °C. Grease a bak­ing sheet with non­stick spray and dust lightly with corn­flour. 2 Mix to­gether the al­monds, nuts and dried fruit with the co­conut, salt and honey. 3 Whisk the egg whites un­til stiff and fold into the nut mix­ture. 4 Spoon heaps of the mix­ture on the pre­pared bak­ing sheet and flat­ten slightly. 5 Bake for 10 min­utes or un­til the edges are lightly browned. Trans­fer to a wire rack while hot and leave to cool. Driz­zle melted cho­co­late over.
