This loaf is a delicious addition to a braai.
MAKES 1 loaf (12 thin slices)
Preparation time: 10 minutes Baking time: 50 minutes 1 can (400 g) cream-style sweet corn 250 ml (1 c) mealie meal 10 ml (2 t) baking powder 2 ml (½ t) salt 2 eggs, whisked 60 ml (¼ c) oil 1 fresh mealie, cooked and kernels stripped from the cob, or 200 g (½ can) whole kernel sweet corn butter, jam and cheese to serve
1 Preheat the oven to 180 °C. Grease a medium loaf tin with nonstick spray.
2 Mix all the ingredients except the whole corn kernels.
3 Spoon into the prepared tin and put the corn kernels on top.
4 Bake for 50 minutes or until a skewer inserted in the middle comes out clean.
5 Serve with butter, jam and cheese.
