YOU Gluten Free - - Bakes & Treats -

This loaf is a de­li­cious ad­di­tion to a braai.

MAKES 1 loaf (12 thin slices)

Prepa­ra­tion time: 10 min­utes Bak­ing time: 50 min­utes 1 can (400 g) cream-style sweet corn 250 ml (1 c) mealie meal 10 ml (2 t) bak­ing pow­der 2 ml (½ t) salt 2 eggs, whisked 60 ml (¼ c) oil 1 fresh mealie, cooked and ker­nels stripped from the cob, or 200 g (½ can) whole ker­nel sweet corn but­ter, jam and cheese to serve

1 Pre­heat the oven to 180 °C. Grease a medium loaf tin with non­stick spray.

2 Mix all the in­gre­di­ents ex­cept the whole corn ker­nels.

3 Spoon into the pre­pared tin and put the corn ker­nels on top.

4 Bake for 50 min­utes or un­til a skewer in­serted in the mid­dle comes out clean.

5 Serve with but­ter, jam and cheese.
