Cheese muffins

These cheesy savoury muffins are a lunchbox favourite for kids and adults, plus they are pre­pared so quickly.

6-8 small muffins

Prepa­ra­tion time: 5 min­utes Bak­ing time: 15-20 min­utes

250 ml (1 c) cake flour pinch of salt 7 ml (1½ t) bak­ing pow­der 2 ml (½ t) mus­tard pow­der 250 ml (1 c) ma­ture Ched­dar cheese, grated hand­ful of chopped spinach (op­tional) 250 ml (1 c) milk creamed cot­tage cheese to serve Pre­heat the oven to 180 °C. Line the hol­lows of a muf­fin tin with pa­per cases. 1 In a bowl, mix all the in­gre­di­ents ex­cept the milk. Make a well in the cen­tre and add the milk. Stir un­til just mixed. 2 Di­vide the bat­ter among the pa­per cases and bake for 15-20 min­utes or un­til a skewer in­serted in the mid­dle comes out clean. 3 Pack in whole or cut in half and spread with creamed cot­tage cheese.
