These cheesy savoury muffins are a lunchbox favourite for kids and adults, plus they are prepared so quickly.

250 ml (1 c) cake flour pinch of salt 7 ml (1½ t) baking powder 2 ml (½ t) mustard powder 250 ml (1 c) mature Cheddar cheese, grated handful of chopped spinach (optional) 250 ml (1 c) milk creamed cottage cheese to serve Preheat the oven to 180 °C. Line the hollows of a muffin tin with paper cases. 1 In a bowl, mix all the ingredients except the milk. Make a well in the centre and add the milk. Stir until just mixed. 2 Divide the batter among the paper cases and bake for 15-20 minutes or until a skewer inserted in the middle comes out clean. 3 Pack in whole or cut in half and spread with creamed cottage cheese.
