Oat ’n nut cook­ies

These cook­ies con­tain oats, nuts and dried fruit so no need to feel guilty if you have one – or two – when crav­ing a sweet snack.

Prepa­ra­tion time: 15 min­utes Cook­ing time: 10-15 min­utes

125 g but­ter 250 ml (1 c) brown su­gar 1 large egg 180 g self-rais­ing flour 5 ml (1 t) bi­car­bon­ate of soda pinch of salt 5 ml (1 t) vanilla essence 125 ml (½ c) oats 80 ml (¹⁄₃ c) each sul­tanas, chopped apri­cots and cran­ber­ries 50 g flaked al­monds 100 g pecan nut halves Pre­heat the oven to 200 °C. Line a large bak­ing sheet with bak­ing pa­per. 1 Cream the but­ter and brown su­gar and whisk in the egg. 2 Add all the re­main­ing in­gre­di­ents, ex­cept the pecan nuts, and mix well. 3 Drop spoon­fuls of the dough on the pre­pared bak­ing sheet and press a pecan nut half into each mound. 4 Bake for 10-15 min­utes or un­til the cook­ies begin to brown. Leave to cool slightly on the bak­ing sheet then ar­range on a wire rack to cool com­pletely. Store in an air­tight con­tainer.
