Oat ’n nut cookies
These cookies contain oats, nuts and dried fruit so no need to feel guilty if you have one – or two – when craving a sweet snack.
12-16 small cookies

125 g butter 250 ml (1 c) brown sugar 1 large egg 180 g self-raising flour 5 ml (1 t) bicarbonate of soda pinch of salt 5 ml (1 t) vanilla essence 125 ml (½ c) oats 80 ml (¹⁄₃ c) each sultanas, chopped apricots and cranberries 50 g flaked almonds 100 g pecan nut halves Preheat the oven to 200 °C. Line a large baking sheet with baking paper. 1 Cream the butter and brown sugar and whisk in the egg. 2 Add all the remaining ingredients, except the pecan nuts, and mix well. 3 Drop spoonfuls of the dough on the prepared baking sheet and press a pecan nut half into each mound. 4 Bake for 10-15 minutes or until the cookies begin to brown. Leave to cool slightly on the baking sheet then arrange on a wire rack to cool completely. Store in an airtight container.
