PREGO STEAK ROLLS

Mozambican food has a strong Portuguese influence, which is evident in these juicy steak rolls bursting with flavour.

SERVES 4-6 Preparatio­n: 15 min Cooking: 30 min

350g steak salt and freshly ground

pepper 5ml (1t) olive oil SAUCE 15ml (1T) olive oil 30ml (2T) butter 2 onions, sliced 2 garlic cloves, crushed 45ml (3t) peri-peri sauce (see recipe on the next page or use store-bought sauce) 1 beef stock cube or pot 15ml (1T) tomato paste 125ml (½c) water 2,5ml (½t) smoked or

regular paprika salt and freshly ground

pepper 5ml (1t) lemon juice

(optional) TO SERVE handful of salad greens 4-6 Portuguese rolls,

halved and buttered extra chopped chilli

(optional)

1 Season the steak on both sides with salt and pepper. Rub with the olive oil. 2 In a hot nonstick pan, sear the meat on both sides until a golden brown crust forms. Turn the heat down and fry the steak for another 3-5 minutes or until done to your liking. Remove from the pan and set aside. 3 Sauce Heat the oil and butter in a saucepan and fry the onions and garlic until soft. Add the peri-peri sauce, beef stock, tomato paste, water and paprika. Stir until well combined and simmer for 5 minutes. 4 Cut the steak into thin strips, add to the sauce and stir. Remove from the heat and season with salt and pepper. Season with a little lemon juice (if using). 5 To serve Layer salad greens on the bottom halves of the rolls. Add the steak and sauce and garnish with chopped chilli (if using). Top with the other halves of the rolls and serve immediatel­y.
