SALAD WITH PEANUTS AND CALAMARI TENTACLES

Calamari – steamed, not deep-fried – is a good source of omega-3 fatty acids. Peanuts are legumes but they’re as nutritious as tree nuts.

SERVES 3 PREPARATIO­N: 10 MIN COOKING: ABOUT 10 MIN DRESSING 60ml (¼c) sesame seeds 100ml extra-light olive oil 60ml (¼c) fish sauce 30ml (2T) soy sauce 80ml (¹⁄₃c) rice vinegar juice and zest of 2 limes 45ml (3T) sugar a generous handful of chopped fresh coriander SALAD 1 lemon, sliced 1 pack (400g) frozen baby calamari tentacles salt olive oil rocket 60-100g roasted unsalted peanuts 1 Dressing Heat the sesame seeds and oil in a pan until the seeds turn golden brown. Cool, then pulse in a food processor until smooth. Mix in the rest of the ingredient­s. 2 Salad Put the lemon slices in the bottom of a steamer and arrange the calamari on top. Season with salt. Steam for about 5 minutes or until the tentacles are tender and done, then stir-fry in olive oil until slightly crispy. 3 Pour a little dressing over the tentacles and arrange on a plate. 4 Moisten the rocket with dressing and arrange on the calamari. Sprinkle the peanuts over and serve.
