STICKY PORK RIBS WITH MULBERRY SAUCE

This tangy sauce is delicious with ribs. If you don’t have mulberries, use frozen blueberrie­s. SERVES 4 PREPARATIO­N: 10 MIN COOKING: 1½ HOURS RIBS 800g pork ribs salt and freshly ground pepper 125ml (½c) BBQ sauce MULBERRY SAUCE 15ml (1T) butter 1 red onion, finely chopped 500ml (2c) mulberries 15ml (1T) honey pinch of salt freshly ground pepper TO SERVE

extra mulberries Preheat the oven to 170°C. Line a baking sheet with foil and grease with nonstick spray. 1 Ribs Season the ribs with salt and freshly ground pepper. Brush BBQ sauce all over and transfer the ribs to the baking sheet. Cover with foil and cook in the oven for 1 hour. 2 Uncover the ribs and brush with more BBQ sauce. Continue cooking, uncovered, for another 20 minutes or until sticky, brushing more sauce onto the ribs halfway through. 3 Mulberry sauce Heat the butter in a saucepan or pot and fry the onion over low heat until soft. Add the rest of the ingredient­s and simmer slowly until the mulberries are soft, stirring every now and again to prevent the sauce from catching. 4 To serve Portion the ribs and serve with the mulberry sauce and fresh mulberries.
