NUT BRITTLE

SERVES 6-8 PREPARATIO­N: 2 MIN COOKING: 12-15 MIN STANDING: 30 MIN 500ml (2c) sugar 200g mixed nuts, roughly chopped 1 Melt the sugar, without stirring, in a nonstick pan over medium heat for 12-15 minutes or until it turns a light caramel colour. 2 Put a silicone mat on a baking sheet, spread out the nuts evenly and pour the caramelise­d sugar over, making sure the nuts are covered. Leave to harden then break into pieces. Enjoy the brittle as is or crush it to sprinkle over ice cream or other dessert. (Turn over)
