MIXED NUT BUTTER

MAKES 500-600ml PREPARATIO­N: 25 MIN 500g peanuts 100g almonds 100g cashew nuts 100g pecan nuts 15ml (1T) coconut oil 30ml (2T) chia seeds 30ml (2T) sesame seeds 5ml (1t) sea salt 1 Combine all the nuts in a food processor and blend for 10-15 minutes, stopping to scrape the sides down with a spatula as necessary. Add the coconut oil and blend for another 10 minutes. 2 Once the nut mixture is smooth, add the chia and sesame seeds, season with the salt and blend for another minute. Spoon the nut butter into jars and store in the fridge. S The nut butter will keep in the fridge for up to two months. You can use other types of nuts but keep peanuts as the base of the mixture. Serve with ice cream, add to smoothies or enjoy on toast or crackers with jam.
