SESAME-CRUSTED STEAMED BUNS

MAKES 10-12 BUNS PREPARATIO­N: 20 MIN RISING: 1 HR COOKING: 30-35 MIN

DOUGH 500ml (2c) cake flour 5ml (1t) instant yeast 5ml (1t) sugar pinch of salt 125-180ml (½-¾c) lukewarm water FILLING 15ml (1T) oil 1 onion, chopped 300g coleslaw mix handful fresh coriander 5cm fresh ginger, grated 30ml (2T) honey 15ml (1T) soy sauce TO FINISH 60ml (½c) sesame seeds 15ml (1T) oil TO SERVE black sesame seeds sweet chilli sauce

Keep a large non-stick pan handy. 1 Dough Mix the flour, yeast, sugar and salt together. Make a well in the middle and add the water bit by bit until the dough is sticky. Transfer to a flour-sprinkled surface and knead until smooth. Cover and leave to rise for 30 minutes. 2 Filling Heat the oil and fry the onion and coleslaw mix until soft. Add the rest of the ingredient­s and stir-fry for 2 minutes. Remove and

leave to cool slightly. 3 To finish Divide the dough into 10-12 balls. Lightly roll out each ball into a circle. Add a little filling to the middle of each bun, fold the sides over and seal using your fingertips. Arrange the buns on a floursprin­kled surface and leave to rise for another 30 minutes. 4 Dip the bottom of each

bun in a little water, then in the sesame seeds. 5 Heat the oil and fry the buns. Fry for 1 minute then add enough water to cover the buns halfway. Cover and steam for 8-10 minutes. Remove the lid and continue cooking until all the water has evaporated. 6 To serve Sprinkle the sesame seeds over and serve with sweet chilli sauce.
