PORK WONTONS WITH SPICY PEANUT SAUCE

MAKES 12-14 DUMPLINGS PREPARATIO­N: 30 MIN COOKING: 15-20 MIN

FILLING 300g pork sausages, meat removed from the casings 4 spring onions, chopped 1 chilli, chopped 1-2 garlic cloves, chopped handful fresh coriander,

chopped DUMPLINGS 1 batch homemade dumpling dough (see page 29), rolled out and cut into squares oil for deep-frying PEANUT SAUCE 30ml (2T) peanut butter 45ml (3T) hoisin sauce 5ml (1t) sriracha sauce 2,5ml (½t) chilli flakes

a little water 30ml (2T) toasted peanuts, chopped

1 Filling Mix all the

ingredient­s together. 2 Dumplings Turn the dough square so it lies in a diamond shape in front of you. Use a teaspoon to put a lump of filling in the middle, then fold the bottom corner of the dough over the top corner. Seal the edges – the dumpling should be a triangle. Fold the two corners at the side over each other. Seal the edges using your fingertips and bring to the middle. Repeat with the rest of the

dough and filling. 3 Heat enough oil for deep-frying in a pot or saucepan. Fry the dumplings in batches until golden brown and cooked. Drain on paper towel. 4 Peanut sauce Mix all the ingredient­s and serve with the dumplings.
