CHILLI-INFUSED OIL

MAKES ABOUT 250ML (1C) INFUSED OIL PREPARATIO­N: 5 MIN COOKING: 5 MIN STANDING: OVERNIGHT

Put 45ml (3T) dried chilli flakes; 2 garlic cloves, crushed; 2 star anise; and 250ml (1c) sunflower oil in a small saucepan. Heat over low heat for 5 minutes. Remove from the heat and add 30ml (2T) soy sauce. Cover the saucepan and leave to stand overnight. Transfer to a jar and use as needed.
