TIPS AND TRICKS FOR COOKING DUMPLINGS, POTSTICKER­S AND STEAMED BUNS

1 When folding the dumplings, be sure to seal the edges well and make sure there are no air bubbles. 2 Chill the dumplings in the fridge for at least 1 hour before steaming or cooking. 3 Line the steamer with baking paper before adding the dumplings – it prevents them from sticking to the steamer and keeps the steamer clean. 4 When using a bamboo steamer, use the right size saucepan or pot – as little steam as possible should be able to escape from the steamer. 5 Steam the dumplings just before serving to ensure they’re juicy. Dumplings can dry out if made too long before serving. 6 The dumplings can be made (but not cooked) beforehand and frozen. Just lightly sprinkle cornflour over and store in airtight containers before freezing. 7 It’s not necessary to defrost the dumplings before steaming – just steam for 5 minutes longer from frozen. 8 If you’re struggling to get the wonton wrappers to seal, make a paste with a little water and flour and brush on the edges before sealing.
