DOUGH
500ml (2c) cake flour
10ml (2t) baking powder
2,5ml (½t) salt
30ml (2T) melted butter
1 egg 180ml (¾c) milk TO FINISH oil, for deep-frying
1 x batch of cold sugar syrup (see recipe on page 27)
1 Dough Mix the flour, baking powder and salt in a large bowl and make a well in the middle.
2 Beat the butter, eggs and milk together until well combined and pour into the well in the dry ingredients. Mix thoroughly until a dough forms.
3 Transfer the dough to a clean surface and knead until smooth and elastic. Cover and leave to rest for 30 minutes.
4 To finish Roll out the dough and weave it into long plaits. Cut into shorter plaits and seal the edges.
5 Heat enough oil for deep-frying and fry the koeksisters in batches until golden brown and cooked.
6 Drain on paper towel, then dunk and soak in the syrup for 3-5 minutes. Drain, leave to cool and store in an airtight container.
