BAKED HAKE with OLIVES,TOMATOES, PEPPADEWS, GARLIC & CHILLI
PREPARATION: 5 MIN / MARINATE: 30 MIN / COOKING: 5-8 MIN / SERVES 6
6 hake fillets, defrosted if frozen 2,5ml (½t) each salt and pepper 250ml (1c) olives, pitted and chopped 250ml (1c) cherry tomatoes, halved 250ml (1c) Peppadews® (mild piquanté peppers) drained and chopped 2 garlic cloves, crushed or finely chopped 2 fresh chillies, finely chopped 125ml (½c) fresh basil, finely chopped 125ml (½c) fresh coriander, finely chopped 30ml (2T) olive oil
10ml (2t) lemon juice
place in the fridge for 30 minutes to marinate. Remove from the fridge 10-15 minutes before cooking to allow the fish to come to room temperature. 3 Preheat the oven to 180°C. Bake for 5-8 minutes, until the fish is cooked through and flakes easily.
