LAMB CHOPS in a lime umami MARINADE
SERVES: 4 / MARINATE: 2 HOURS / COOKING: 10 MINUTES
8 lamb chops, trimmed
sea salt and freshly ground black pepper
MARINADE
¼c honey
125ml (½c) lime juice
125ml (½c) lemon juice, plus a little of the rind
¾c sweet soya sauce
TO SERVE
sprigs of fresh rosemary
lemon wedges
lime wedges
1 Season the chops with salt and pepper.
2 Marinade Mix together the honey, lime juice, lemon juice and rind, and soya sauce. Toss the chops in this marinade, cover and refrigerate for a few hours (the longer the better for the flavours to be absorbed).
3 Heat a grill or castiron pan. Remove the chops from the marinade (reserve the marinade), then place them in the pan and grill in the oven on each side until golden brown and cooked to your preference.
4 Meanwhile, heat the marinade in a small pot and bring to a boil.
5 Remove the chops from the pan, arrange them in a serving dish and drizzle over the sauce, if you like.
6 To serve Garnish with rosemary and serve with lemon and lime wedges on the side.
