MEDITERRAN­EAN PAN CHICKEN

This delicious onepan meal is ideal for dinner. 4 chicken breast fillets, halved lengthways salt and pepper 12,5ml (2½t) paprika 15ml (1T) balsamic vinegar 20ml (4t) olive oil 150g bacon rashers 1 onion, chopped 1 red pepper, julienned oil 10ml (2t) paprika 1 can (400g) Mediterran­ean tomatoes 125ml (½c) black olives 250g white rice 500ml (2c) chicken

stock TO FINISH pecorino cheese fresh basil 1 Season the chicken fillets with salt and pepper. 2 Mix the paprika, vinegar and olive oil and rub all over the chicken. Leave to stand for 10 minutes. 3 Brown the chicken in a pan, then remove. 4 In the same pan, fry the bacon, onion and red pepper until cooked. 5 Add the paprika, tomatoes and olives and stir. 6 Add the rice, then the chicken stock and bring to the boil. 7 Turn the heat down and simmer until most of the liquid has been absorbed and the rice is cooked. 8 Add the chicken and

heat until warm. 9 To finish Add a few shavings of pecorino cheese and some fresh basil.
