FROZEN CHRISTMAS PUDDINGS
SERVES 8 / PREPARATION & COOKING: 30 MINUTES
2L (8c) vanilla ice cream, softened 800g golden fruit cake, crumbled 80ml ( c) brandy or rum chopped pecans, orange rind strips and chocolate curls,
to decorate CHOCOLATE SAUCE 180g dark chocolate, chopped 250ml (1c) double thick cream 1 Line eight 180ml ( ³⁄4c) moulds with clingfilm, extending the plastic 3cm over the edges.
2 Blitz the ice cream, cake and brandy in batches in a food processor until combined. Spoon the mixture into the moulds. Cover with clingfilm then foil; freeze overnight.
3 Chocolate sauce
Add the ingredients to a small saucepan and stir over low heat until smooth.
4 Just before serving, turn the puddings out onto a lined baking tray, gently peel away the plastic then transfer to serving plates. Drizzle the sauce over, decorate with nuts, rind and chocolate curls, and serve.
