SNOEK with APRICOT GLAZE
PREPARATION TIME: 15 MINS / STANDING TIME: 30 MINS / AIR FRYER TEMPERATURE: 190°C / COOKING TIME: 20 MINS
Use fresh or frozen snoek to prepare this traditional South African fish dish.
SNOEK
◗ 600-800g piece of snoek
◗ coarse salt
GLAZE
◗ 60ml (¼c) butter, melted
◗ 50ml apricot jam
◗ 25ml (5t) lemon juice
◗ 5ml (1t) fish spice
◗ 1 small clove garlic, crushed
◗ 1 fresh chilli, seeded and chopped (optional)
TO SERVE
◗ lemon wedges, baked sweet potato and salad
1 Snoek Rub the snoek with salt and leave to stand for 30 minutes. Wash the salt off thoroughly and pat the fish dry.
2 Glaze Mix the glaze ingredients together.
3 Place the snoek in an aluminium foil container or ovenproof dish and pour the glaze over it.
4 Preheat the air fryer to 190°C and then cook the snoek for 20 minutes. Turn halfway through cooking. The flesh will flake apart easily with a fork when it's done.
5 To serve Serve hot with lemon wedges, sweet potato and salad.
