The GATSBY BUNNY CHOW stuffed with STEAK and CHIPS

SERVES 4-6 / PREPARATIO­N: 20 MIN / COOKING TIME: 30 MIN

STEAK 2 x 250g beef sirloin steak 15ml (1t) oil 15ml (1T) Cajun seasoning freshly ground pepper ONIONS 30ml (2T) oil 2 onions, sliced 5ml (1t) sugar 2,5ml (½t) curry powder a pinch of salt SAUCE 125ml (½c) mayonnaise 15ml (1T) chilli sauce 15ml (1T) chutney 5ml (1t) vinegar 1 clove garlic, grated TO FINISH 4-6 bread rolls 2 handfuls ready-made chips a few cherry tomatoes, halved chopped fresh parsley peri-peri sauce (optional)

1 Steak Brush the steak with oil and season with the Cajun spice and pepper.

2 Heat a pan until smoking hot and seal the steaks for 1 minute per side. Lower the heat and fry for another 2-3 minutes per side or until cooked as desired. Remove the steaks from the pan and set aside.

3 Onions Heat the oil in a pan and fry the onions over moderate heat until soft and golden brown.

Add the sugar and curry powder and fry for another minute. Season with salt.

4 Sauce Combine all the ingredient­s and mix well.

5 To finish Cut the steaks into thin strips. Cut the rolls open at the top and hollow it out a little.

6 Spread some of the sauce in the hollows of the rolls and stuff some of the chips and steak strips into them. Spoon some of the onions on top, spoon more sauce over, if preferred, and finish with the tomato and parsley.

7 Serve the rolls with peri-peri sauce, if preferred.
