STEAMED BREAD stuffed with PULLED BEEF and BAKED BEANS

STEAMED BREAD

500g ready-made bread dough

15ml (1T) oil

30ml (2T) flour

boiling water

PULLED BEEF

500g beef, cubed

salt and freshly ground pepper

60ml (¼c) flour

30ml (2T) oil

2 onions, chopped

4 garlic cloves, chopped

2 bay leaves a pinch of cloves

500ml (2c) beef stock

a large handful of parsley, chopped

TO FINISH

1 tin (410g) baked beans in tomato sauce

Keep a metal bowl, a clean plastic bag, and a large saucepan with a lid and a saucer handy.

1 Steamed bread Knead the dough lightly and roll into a ball. Grease the metal bowl with the oil and sprinkle the flour inside. Shake the bowl so that the flour covers the entire inside of the bowl. Empty any excess flour.

2 Carefully put the dough ball in the bowl, cover and leave in a warm place for 30 minutes or until risen.

3 Put the plastic bag over the bowl and tie it tightly – make sure there’s enough space above the bag for the bread to rise.

4 Put the saucer in the saucepan and put the bowl with the dough on top (keep the plastic bag over the bowl). Pour water around the sides of the bowl so that it reaches halfway up the bowl (it must not flow over the top of the bowl).

5 Put the lid on the saucepan, and steam the bread over moderate heat for 1 hour and 15 minutes or until the bread is cooked through. If it boils dry too quickly, pour more water around the sides of the bowl.

6 Carefully remove the bowl from the saucepan and leave to cool for 10 minutes. Open the bag, turn the bread out and leave to cool completely.

7 Pulled beef Season the meat with the salt and pepper and roll in the flour. Heat the oil in a pressure cooker and fry the meat until brown on all sides. Add the rest of the ingredient­s, except the parsley, and mix through. Seal the lid well and bring to the boil. Cook under pressure for 35-40 minutes or until the meat is tender.

8 Tear the meat apart and stir in the parsley.

9 To finish Cut the top of the bread open and hollow out slightly. Spoon the shredded meat and the beans into the cavity and serve.
