How to smoke the tomatoes: Mix 125 ml (½ c) raw rice, 60 ml (¼ c) each Rooibos and Earl Grey tea leaves, 60 ml (¼ c) brown sugar, 3 crushed garlic cloves and 4 torn bay or lemon leaves. Wrap in aluminium foil, fold closed, make a few holes on top and place inside an old pot. Place the tomatoes on a rack over the foil. Heat until the tea leaves start to smoke then close with a lid. Smoke for 5-7 minutes. Don’t smoke for too long or the tomatoes will become bitter.
