FOR THE TART SHELL

1½ cups cake wheat flour ½ cup un­salted, chilled but­ter 3 to 4 tbsp ice wa­ter pinch of salt

FOR THE FILL­ING

1 tbsp but­ter 1 tbsp olive oil 1 onion, peeled and chopped 1 gar­lic clove, peeled and crushed 6 pork sausages, cas­ings re­moved 1 bunch kale, stems re­moved and roughly chopped ½ cup chicken stock hand­ful fresh basil leaves, chopped 1 egg, lightly beaten 1 cup Dan­ish feta cheese, crum­bled (or grated cheese of your choice)

FOR THE PAS­TRY

2½ cups cake wheat flour 1 tap salt 1 tsp cas­tor sugar ½ cup cold but­ter, cut into small cubes 4 ta­ble­spoons ice wa­ter, plus 4 more if needed

FOR THE FILL­ING

1 cup straw­ber­ries, washed, hulled and chopped 3 to 4 ta­ble­spoons sugar
