1 tbsp but­ter 1 tbsp olive oil 1 small onion, finely chopped 1 clove gar­lic, crushed ¼ tea­spoon ground ginger 1½ cups chicken stock 1½ cups mango juice 2 cups cous­cous (un­cooked) ½ cup frozen peas 1 cup cooked chicken (use the leftovers you have from last night’s roast chicken) 2 ripe man­goes, peeled and cut into cubes (you can re­place this with tinned mango or peaches) salt & pep­per to taste
